This restaurant concept will be built from two 8’x40’ shipping containers constructed in a “L” shape. One container will consist of indoor seating and a restroom, while the other will house the kitchen, kitchen equipment, cold storage, and janitor’s closet. The “L” design creates a courtyard for additional outdoor seating (preliminary drawing below). The site design will include space for ADA access, dumpster enclosure, fencing, exterior lighting, and fire pit.
What: The Restaurant, Salt and Lime, will be owned and operated by Shelby Remy (Chef), Spencer Snow (Manager). The concept will be open for lunch and dinner. It will serve adult drinks, bar snacks, salads, grab-and-go options, and brugers/fish options. Shelby and Spencer currently own and operate Salt and Vinegar, a restaurant concept located at Mother Road Market for the last two years.
